The Opportunity We are currently seeking a skilled and passionate Chef to join our kitchen team full-time. You must be able to prepare all food from scratch no shortcuts, no pre-prepped kits just honest, high-quality cooking using fresh ingredients and traditional techniques. Key Responsibilities Menu Planning & Cost Management Develop seasonal, Italian-inspired menus that reflect BayBeachs coastal and traditional identity. Responsible for dish costing, portion control, and supplier coordination to ensure quality and cost-efficiency without compromising on authenticity. Scratch Food Preparation Oversee and actively participate in preparing all dishes from scratch including fresh pasta, sauces, pizza dough, and desserts using traditional techniques and fresh ingredients. Shortcuts and pre-prepped items are not part of our kitchen philosophy. Quality Control Ensure all meals meet consistently high standards for flavor, presentation, and portioning. Conduct regular quality checks and adjust processes or training where necessary to uphold BayBeachs reputation for excellence. Team Leadership & Communication Lead a cohesive kitchen team through clear communication, role delegation, and hands-on support. Work closely with front-of-house and management to ensure smooth service and quick issue resolution. Training & Mentorship Train and mentor kitchen staff in authentic Italian cooking techniques, knife skills, food handling, and preparation methods. Foster a culture of continuous improvement and learning in the kitchen. Hygiene & Safety Compliance Maintain full compliance with food safety regulations. Monitor cleanliness, temperature logs, sanitation practices, and overall kitchen safety to ensure a safe environment for both staff and guests. Staff Recruitment & Development Assist with hiring and onboarding of kitchen staff. Evaluate skill levels, deliver structured training, and support professional development to maintain a high-performing team. Inventory, Storage & Waste Management Oversee stock control, food preservation techniques, and waste minimization. Ensure ingredients are properly rotated, stored, and utilized efficiently to maintain freshness and minimize loss. What Youll Bring Qualifications : Certificate IV in Commercial Cookery or equivalent. Experience : Minimum 1 year as a Chef, with demonstrated ability to prepare food from scratch. Culinary Knowledge : Strong understanding of traditional Italian recipes, ingredients, and methods. Work Ethic : High attention to detail, time management, and pride in your work. Leadership : Ability to guide junior staff and keep kitchen operations running smoothly. Passion : Genuine love for food, hospitality, and doing things properly.
