Coordinates functions and activities within the cold section at the Kitchen Department and with other F&B department heads and supervisors.Assists the Executive Chef in controlling daily operations, including:Quality levels of production and representation of all food items produced.Cleanliness, sanitation, and hygiene in the cold section of the kitchen.Ensuring maximum performance in these tasks.Assist the Executive Chef in the production, preparation, and presentation of all food items to ensure the highest quality at all times.Ensure the quality of all products produced in his section.Train staff on proper use and cleaning of machinery and equipment.Train and motivate subordinates.Establish and maintain effective employee relations.Check function sheets and ensure all food for banquets and special events are prepared on time and meet quality and quantity standards.Take proper inventory of food ingredients in his section.Prepare daily food requisitions as needed.Check stock levels daily and prepare requisitions of supplies in cooperation with the Senior Sous Chef for the Executive Chefs approval.Inspect all received meat, poultry, and fish for quality standards.Control costs by maintaining adequate inventory and minimizing wastage.Diploma or certificate in Culinary Arts; at least one year of experience in a similar role is advantageous.Ability to work well under pressure in a fast-paced environment.Ability to work cohesively and collaboratively within a team.Service-oriented with attention to detail.Multicultural awareness and ability to thrive in a diverse environment.Good presentation and influencing skills.Ability to work independently and demonstrate initiative in a dynamic setting.
