We proudly manage three bustling restaurant locations in BrisbaneToowong Village, Mt Gravatt Plaza, and Sunnybank Hills Shoppingtown. Renowned for our Western-style breakfast, lunch, and premium coffee offerings, we provide full table service, takeaway, and an extensive a-la-carte menu. Job Description The position of Chef is responsible for planning, organizing, and supervising the preparation and cooking of food. This role requires strong culinary expertise, leadership ability, and the capacity to maintain kitchen operations efficiently. The Tasks for the Position Include: Plan and design seasonal and cost-effective menus based on customer preferences and dietary needs. Monitor the preparation, quality, and freshness of ingredients. Oversee and participate in the preparation and cooking of food. Ensure consistency and quality in food presentation and portion control. Wash, peel, cut, and prepare fruits, vegetables, and other ingredients for consumption. Freeze, preserve, and store food properly to maintain freshness and safety. Supervise and mentor kitchen staff, ensuring clear communication and skill development. Conduct training and demonstrate cooking techniques and procedures. Modify recipes to accommodate customer requests and dietary restrictions (e.g., low salt, dairy-free). Monitor kitchen operations, temperature control, and timely completion of temperature logs. Ensure strict compliance with food hygiene, safety, and sanitation regulations (HACCP standards). Collaborate with management, dietitians, and front-of-house staff on food preparation and menu updates. Conduct inventory management, order supplies, and liaise with suppliers. Estimate and manage food and labour costs within budget constraints. Maintain and ensure cleanliness of kitchen equipment and storage areas. Experiment with new recipes, ingredients, and presentation ideas to enhance the menu. Organise and supervise kitchen workflow, ensuring efficiency and timely service delivery. Handle staff rosters, task allocation, and performance monitoring. Foster a collaborative and professional kitchen environment. The Skills Required for This Position Are: Certificate III or IV in Commercial Cookery and Diploma of Hospitality Management, with relevant experience managing a commercial kitchen At least 1 year of experience as a Chef or similar role Plan and develop menus to meet dietary requirements, customer preferences, and budget Prepare, season, and cook a wide range of foods including entrees, mains, and desserts Supervise and coordinate kitchen staff and activities Train and mentor junior staff to ensure consistent quality and standards Oversee food preparation and maintain hygiene compliance Manage kitchen operations efficiently during busy service periods Order and maintain inventory of food supplies and equipment Monitor and control resource use to minimize waste and manage costs Ensure workplace cleanliness and adherence to food safety standards (e.g., HACCP) Monitor and record temperatures of storage and preparation areas Innovate and experiment with recipes, presentation, and techniques Stay informed on food trends and customer expectations Operate commercial kitchen equipment such as ovens, grills, deep fryers, mixers, etc. Apply portion control, standard recipes, and kitchen calculations Communicate clearly with staff, suppliers, and customers Address special dietary needs, customer feedback, and service issues professionally Application Process: Interested candidates are invited to submit their resume and a cover letter detailing their relevant experience and qualifications to kk.chatterboxcafe@gmail.com.
