Job Description: The Baker is responsible for the preparation, baking, and finishing of a wide range of artisan breads, pastries, and baked goods at Le Boulangerie Pty Ltd. This role ensures high-quality production, consistency in taste and texture, and compliance with food safety standards. The Baker works as part of a collaborative team to maintain the bakerys premium product standards and support the day-to-day operations. Duties and Responsibilities: Prepare and bake a variety of breads and baked products including sourdough, baguettes, rolls, and specialty loaves Produce selected pastry items including croissants, danishes, puff pastries, and other viennoiseries following traditional and house recipes Weigh, mix, and knead doughs and batters for both bread and pastry applications Operate and maintain bakery machinery such as mixers, dough dividers, sheeters, and ovens Monitor baking times and oven temperatures to ensure products are baked to specification lnspect and test baked goods for quality, consistency, and compliance with production standards Adapt recipes and methods to incorporate seasonal ingredients or special dietary requirements Control stock levels and monitor the use of raw materials to minimise waste Clean, sanitise, and maintain bakery work areas and equipment in line with food safety standards Assist with planning and scheduling daily production to meet customer demand and minimise downtime lCollaborate with kitchen and front-of-house staff to coordinate orders and ensure timely delivery Mentor and guide junior baking staff and apprentices in both bread and pastry techniques Ensure compliance with workplace health and safety regulations, HACCP principles, and hygiene guidelines Participate in new product development and contribute ideas for seasonal or promotional baked and pastry goods Maintain accurate records of production, inventory, and compliance documentation Skill and Ability Requirements: Certificate III in Baking or equivalent qualification with a minimum of 1 year of full-time commercial baking or pastry experience Proven knowledge and hands-on experience in artisan-style bread making and traditional baking techniques Ability to work early morning shifts, weekends, and public holidays as required Excellent understanding of bakery equipment operations and baking processes Attention to detail and commitment to delivering high-quality products consistently Strong organisational, time management, and teamwork skills Knowledge of food safety regulations, HACCP, and WHS requirements Ability to work independently under pressure in a fast-paced environment Shortlisted candidates will be contacted.
