Ideally located just south of Wollongong, this premium property offers a relaxed seaside escape with world-class amenities and modern design.About the Role:We are seeking a highly skilled and motivated Executive Chef to drive the start-up Kitchen operations at Crowne Plaza Shell Cove. Offering a unique and immersive dining journey, we are committed to delivering an exceptional dining experience and are looking for a creative and passionate Executive Chef to ensure the highest standard of culinary excellence. Reporting to the General Manager, this is a unique opportunity to be part of the hotel from the ground-up and play a key role in bringing a world-class hospitality experience to life.Key Responsibilities:Pre-Opening Collaborate with hotel leadership and contractors to finalise kitchen layouts, equipment specifications, and operational workflows. Oversee installation, testing, and setup of all kitchen equipment to ensure functionality, safety, and compliance with health regulations. Design and develop innovative, high-quality menus for all outlets (restaurant, bar, in-room dining, events), aligned with the hotels brand and market positioning. Hire, train, and mentor a skilled culinary team in preparation for the hotel''s opening, establishing a strong kitchen culture from day one. Develop standard operating procedures for food preparation, hygiene, storage, inventory control, and waste management. Identify and establish relationships with local and international suppliers, ensuring timely sourcing of high-quality ingredients and kitchen essentials. Ensure all culinary operations meet food safety standards, sanitation regulations, and occupational health and safety guidelines. Lead kitchen operations for pre-opening events, VIP previews, and menu tastings to refine offerings and generate buzz. Establish opening budgets for kitchen operations and monitor food cost, labour cost, and other operational expenses post-opening. Work closely with F&B service, purchasing, housekeeping, and engineering to ensure seamless coordination and readiness for launch.OperationalCollaborate with the management team to create innovative and enticing menus that reflect our commitment to high-quality, seasonal ingredients and showcase your culinary expertise.Oversee day-to-day kitchen operations, ensuring a smooth and efficient workflow.Manage inventory, order supplies, and maintain a clean and organised kitchen environment.Inspire and lead a team of talented chefs and kitchen staff. Provide mentorship, guidance, and training to foster a positive and collaborative kitchen culture.Maintain high standards of food quality and presentation. Conduct regular tastings and inspections to ensure consistency and excellence in every dish served.Work closely with the management team to control food costs and maximise profitability.
