Job Description

The Senior Chef de Partie is responsible for leading the operations of their assigned kitchen section and supporting the broader kitchen leadership team in delivering consistently exceptional food. Working closely with the Sous Chef and Head Chef, this role upholds The Belongils culinary standards through skilled execution, mentoring of junior staff, and proactive contribution to menu development and operational excellence. Oversee daily operations within the assigned section, ensuring smooth service, efficiency, and consistent quality; Support the Sous Chef and Head Chef in coordinating workflow and communication between sections to maintain service cohesion; Lead, train, and mentor Chefs de Partie, Commis, and Kitchenhands to build capability and ensure consistency across the team; Maintain exceptional quality, taste, and presentation of all dishes prepared within the section; Contribute to menu development, seasonal updates, and specials aligned with The Belongils food philosophy; Manage section stock control, including ordering, receipting, safe storage, and rotation to ensure freshness and minimise waste; Uphold WH&S and Food Safety practices, including allergen management, temperature monitoring, and hygiene compliance; Monitor portion sizes, wastage, and efficiency to support kitchen profitability; Maintain a clean, safe, and organised work environment that reflects The Belongils professional standards; Actively participate in team briefings, cross-training, and continuous improvement initiatives to enhance kitchen performance and culture.
