Australian Meat Group is seeking a boning room manager to be responsible for the daily operations of the boning room, including managing staff, ensuring food safety and quality standards, maintaining compliance with regulations, and maximizing production efficiency and yield. This involves overseeing the deboning, trimming, and packaging of meat to meet product specifications while controlling costs and maintaining a safe, clean, and compliant work environment. Production and efficiency Oversee daily production to meet targets for quantity, quality, and cost. Ensure meat is processed to specification and maximize yield from each carcass. Minimize production downtime and waste. Coordinate activities to ensure efficient output and resource allocation. Safety, quality, and compliance Implement and enforce all food safety, hygiene, and quality obligations, including HACCP and GMP compliance. Promote a safe working culture and ensure staff follow all health and safety procedures. Ensure all legislative and company policies are met and that the department is compliant with all requirements. Conduct and oversee quality checks and monitor processing standards. Staff management and development Manage and lead the boning room staff on a daily basis. Develop and train staff, provide mentoring, and ensure they are competent in their roles. Administration Record and process all required departmental documentation accurately and in a timely manner.
