We are seeking an experienced Chef to lead our kitchen team at Okami Bendigo. The ideal candidate will demonstrate strong culinary expertise, excellent leadership abilities, and a commitment to delivering an exceptional dining experience. You will oversee all kitchen operations, including preparing ingredients, cooking, controlling food quality, and supervising kitchen staff. Roles and Responsibilities Overseeing kitchen operations, including managing workflows, coordinating staff, and ensuring efficient food preparation. Checking the daily preparation list at the start of each shift to ensure ingredients and products are sufficient for service. Overseeing storage management and procurement to ensure food quality. Preparing a range of ingredients for various dishes, and cooking to orders by applying different techniques. Managing recipes and portion controls and adjusting to customers'' requirements where necessary. Monitoring cooking and refrigeration equipment temperatures. Assisting in planning new menus and developing special dishes. Supervising the cleaning and organisation of kitchen, walk-in coolers, and storage area. Ensuring adherence to safety, hygiene, and food quality regulations and standards. Providing professional training for the kitchen staff. Required Qualification and Experience At least 3 years'' experience as a Chef Cert IV or above in cookery Experience with Japanese cuisine is essential. Proficiency in cutting and cooking techniques and principles. Proven leadership, team management, and staff training abilities. Excellent communication, organizational, and time-management skills.
