Job Type: Permanent position | Full time position Job Description Park Proxi Gibraltar Bowral is looking for highly experienced and skilled Chef de Parties to join the kitchen team in our premium restaurant venue. Marilo is the newest Bowral restaurant which youll want to discover. Marilo offers a unique Asian-inspired menu crafted from local, seasonal produce. From savoury dumplings to kung pao chicken, our dishes highlight the regions best ingredients. Role Overview As Chef de Partie, you will be responsible for assisting with leading and managing a kitchen section while helping to create dishes to the highest standards. Reporting to the Head Chef, you will be tasked with: Supervising junior staff & helping to lead/manage the kitchen team Assisting senior chefs with menu planning, estimating food costs & financial planning Preparing/cooking foods as per the menu Overseeing plating & portioning of meals Coaching, training & developing junior kitchen staff Assisting with inventory management & ordering supplies Ensuring the quality of food during preparation & production processes Ensuring all HACCP, food safety & food storage requirements are adhered to at all times Maintaining a safe work environment & enforcing WHS requirements Overseeing cleaning, opening/closing duties, mis-en-place & general kitchen maintenance Maintaining all kitchen utensils & equipment Full-Time Salary: $75,000-$80,000 About You We are looking for Chef de Partie candidates with experience working in high volume kitchens and with a passion for producing amazing food. You will need to have: Trade qualifications Experience working in a similar hotel restaurant venue At least 2+ years'' experience at minimum CDP level Experience with Asian cuisine Cooperation skills & be a team player A commitment to producing an excellent product for customers Experience working across various kitchen stations Experience with a wide range of culinary techniques A desire to progress & grow within your trade Excellent written & verbal communication skills Experience coaching & developing kitchen staff Leadership & management skills A strong understanding of WHS, HACCP & other relevant food/culinary regulations About Us Located only 90 minutes from Sydney, the Park Proxi Gibraltar Bowral is one of the largest hotels in the Southern Highlands region of New South Wales.
