OverviewIn this role as a Pastry Chef, you will be responsible for assisting in the effective operation of the kitchen. This will be achieved by working as a team with other kitchen staff to provide the appropriate quality and level of pastry products and service to members, guests & visitors by adhering to RACV policies and procedures.ResponsibilitiesChecking the cleanliness of equipment and operation of premises before production runs to ensure compliance with occupational health and safety regulationsChecking the quality of raw materials and weighing ingredientsKneading, maturing, cutting, moulding, mixing and shaping dough and pastry goodsPreparing pastry fillingsMonitoring oven temperatures and product appearance to determine baking timesCoordinating the forming, loading, baking, unloading, de-panning and cooling of batches of bread, rolls and pastry productsGlazing buns and pastries, and decorating cakes with cream and icingOperating machines which roll and mould dough and cut biscuitsEmptying, cleaning and greasing baking trays, tins and other cooking equipmentMaintain knowledge of and deliver products and services to members, guests and visitors that are compliant with standard RACV operating procedures.What youll need to be successfulBasic knowledge of food items and base cooking techniques.Good knowledge of pastry.Knowledge of the kitchen sections and associated service styles.Knowledge of cleaning and hygiene procedures.Understanding of stock rotation.Thrive in a large, busy & fast paced work environment, with efficiency, organisation, time management and attention to detailStrong communication skills, can follow direction and work well in a team environmentCommitted and a passion for cooking with a strong focus on food quality and presentationWe are OfferingCompetitive Salary + Penalties evenings, weekends & public holidays + 11% SuperDiscounts on RACV products & resortsUniform + Free parking onsiteEmployee of the month recognitionA little about usAs Victorias largest member organisation, we have a powerful organisational vision: to improve the lives of Victorians by addressing their needs in the areas of mobility, home and leisure.Our two RACV Clubs are an integral part of making this a reality.
