About The Role This role is a key member of the St Hugo Grant Burge Brand Home team, and actively supports the Brand Home Manager to deliver an overall worldclass restaurant experience for visitors. The Assistant Restaurant Manager role will focus on the execution and management of daytoday operations at the highest standards across the St Hugo restaurant and also supporting management and delivery of functions and events. The position also leads the planning of staff education and training alongside the Assistant Brand Home Manager role, for all Front of House staff across wine/brand knowledge, experiences/tastings, and operational protocols in line with company procedures. The position will work in collaboration with other key Brand Home staff across precinct to ensure operational efficiencies are maintained, and support delivering the cellar door experience and hosting of VIP guests when required. The position contributes to the Vinarchy vision and values and strives for continuous improvement in all that we do. Key Responsibilities Include Operational Leadership Accountable for the efficient management of the Brand Home, on a daytoday basis and guiding the brand home hosting team to ensure all levels of service are met Manage booking systems (Sevenrooms) for table allocation, special requests, and communication with FOH staff. Maintain and update product listings in the EPOS system for accurate pricing and availability. Coordinate ordering schedules for wine, food, and operational supplies, ensuring inventory levels meet business needs. Support compliance activities including GMP audits, chemical registers, and first aid requirements. Team Development & Training Lead and motivate the Brand Home team to deliver exceptional customer experiences. Plan and deliver wine education and operational training sessions to enhance staff knowledge and service standards. Assist with onboarding new employees and provide ongoing coaching to support career development. Conduct daily team briefings to communicate priorities, bookings, and service expectations. Customer Experience & Brand Representation Act as a brand ambassador, hosting VIP guests and delivering premium experiences aligned with St Hugos standards. Ensure a consumercentric approach across all touchpoints, from welcome desk to dining and wine experiences. Handle customer queries and complaints promptly and professionally to maintain high satisfaction levels. Restaurant Service Lead FOH operations during service, ensuring guests receive attentive and knowledgeable care. Update and review restaurant and beverage menus regularly based on stock availability and pricing. Advise guests on food options and wine pairings, and communicate feedback effectively to the kitchen team. Maintain cleanliness and presentation standards across FOH and BOH areas. Cellar Door & Wine Experiences Supervise wine tastings and experiences, ensuring staff deliver engaging and informative sessions. Promote wine sales and Distinction Wine signups to achieve Brand Home KPIs. Upsell promotions and special offerings to enhance customer engagement. Events & Functions Assist in planning and execution of functions, including preparation, service leadership, and packdown. Ensure event run sheets are followed and communication flows between service staff, kitchen, and event coordinators. Safety & Compliance Support the Brand Home Manager in driving a strong safety culture, including timely incident reporting and corrective actions. Contribute to internal compliance audits and maintain adherence to health and safety standards. Business Support Prepare insights and reports for monthly meetings and represent the Brand Home Manager when required. Foster a positive and collaborative team culture that aligns with business goals. What Youll Bring Essential Strong interpersonal skills and ability to lead, motivate and develop a team Experience in leading & motivating a team to achieve strong results in a fastpaced environment whilst maintaining strong workplace relationships Experience in hosting customers in a hospitality or winefocused environment Demonstrate a passion for wine, and desire to deliver quality wine experiences to customers Specialist in a winefocused environment with minimum of WSET 2 qualification or other wine education program Experience in problem solving and making decisions in complex and multifaceted situations Responsible Service of Alcohol & Liquor Licensing Laws Certificate Basic literacy, numeracy, and communication skills Desirable Hospitality certification or equivalent Current First Aid Certificate and Fire Warden Certificate Responsible Person badge Why Join Us?
