The company is looking for an exceptional Head Chef to build on the pubs outstanding reputation. Irish Murphys Ballarat Our vision is to become the Best Irish Pub in Australia. As one of the oldest pubs in Ballarat, Irish Murphys has a fond spot in all locals hearts. We are an Irish Pub and as such has the best Guinness in Ballarat, Kilkenny and Irish Whiskeys. Our food is Irish focused and supported by pub favourites. Centrally located in Ballarat, only 1.5 hours from Melbourne, we have over 80 dinning seats, a separate function room and 22 beer tabs. We have live music every Friday and Saturday nights as well as Celtic jam sessions on Sunday afternoons. Our Core Values Craic- we have fun, are genuine and inspire thoughts of Ireland and the potential of travel Teamwork- work together, take ownership and set high standards Family - we are a family business that welcomes all and creates a connected community Reporting Line The Head Chef will report to the Owners Key Responsibilities The Head Chef will be accountable for the following: Maintaining food quality while looking for areas to improve, grow and innovate To create exciting new menu ideas that suits our customers and Irish philosophy Set menu guidelines around dishes quality, price points and costs Utilise local and seasonal foods were possible Daily operation of the kitchen Manage staff, set rostering and optimize staffing levels Supervision, training and development of other kitchen staff Creating strong relationships with customers, suppliers and front of house staff Ordering, storage and overall control of stock Effectively manage food costs within budget constraints Ensure compliance with workplace health and safety practices Ensure hygiene standards are maintained and compliance requirements met Care and maintenance of equipment Ensuring the culture and values are maintained Other accountabilities as defined by the Owners from time to time Selection Criteria Experience A proven track record as a Leader and Head Chef Ability to appropriately manage a busy venue under pressure and be resilient when required Proven capability to manage food costs and deliver target margins Experience in managing kitchen staff Skills The successful applicant must be creative, highly organised, and experienced in all levels of kitchen operations and management Be a qualified Chef Hold a minimum certificate IV in Commercial cookery Have excellent time management and communication skills Have a can-do attitude Think on your feet to problem solve Lead and develop a team Work to achieve targets Honesty, punctuality and loyalty A commitment to providing excellent products and service Requirements A preparedness to live and work in a vibrant regional area Applications Applications to Donald Mace: [email protected]
