JOB DESCRIPTION To direct and control the Culinary Operations of the business at a high level while implementing, maintaining and abiding by all standards, policies and/or procedures set forth by our company and applicable government agencies. This includes, but is not limited to: maintaining high morale in your team and executing/driving excellence in food quality, food preparation & creativity, cleanliness, organization/labour cost/food cost and the ongoing development of the skills of your crew and management of all food service operations. Recipe development and plating skills are important but we are not a tweezers kind of place (but we can use them if we need to) KEY RESPONSIBILITIES Provide purposeful leadership, continuous supervision, and ongoing training of the culinary/food service team which includes seasoned veterans and new hires to food service high school students Upstream and downstream communications Full direction of the food service operations and management of quality assurance Inventory management and ordering, Shoulder season production management in preparation for peak season Expert staff scheduling meeting known historic labour/sales metrics Standard fare and creative feature menu development and implementation Incremental recipe/flavour amelioration - small changes for better effect Food cost control and a strong focus on rotation and waste reduction Understand, use and improve existing systems QUALIFICATIONS & EXPERIENCE Previous experience managing a very human culinary team in a high volume, fast paced environment Experience with projecting and managing inventory, food cost control, labour cost control, recipe amd food preparation management Knowledge and consistent continuous compliance to government health and safety standards Proven professional leadership skills - human staff development and motivation, technical culinary skills training, policy and procedure management, time management, problem solving/decision making Excellent interpersonal skills - self-managing and conscientious, positive energy, excellent written and verbal communication skills, administration skills, adaptability/flexibility, dependability/attendance, professional appearance/grooming and presentation Proven ability to achieve short and long term planned goals OTHER KEY ATTRIBUTES You are able to balance the different requirements of the role.
