What You Will Be Doing Create menus and new recipes; plated and buffets pastry items for food and beverage outlets, restaurant, banquets, room amenities, chocolate offerings, vienoiiserries, baked goods, petit fours, customs desserts based on specific parameters. Supervise, provide guidance and training to pastry team in all food preparation and execution of the events. Review the daily operations with the pastry team, prepare the necessary food items in accordance Oversee scheduling, labour allocation, staff roles, and ensure smooth shift operations Conduct daily shift briefings with pastry team members Effectively manage food costs and production control to reduce wastage and meet financial targets Manage departmental budget: control food and labour costs, monitor portion control, minimize waste, maintain food cost targets. Kitchen maintenance and cleaning. Following food safety requirements and hygiene standards Ensure that all food products are handled, stored, prepared and served safely in accordance with hotel and Food Safety guidelines. Ensure that all EHC and Vancouver Coastal Health Standards and processes are completed on a daily basis, this includes but isnt limited to filling out daily temperature logs, labelling and dating of items as well ensuring food storage areas are cleaned daily. Apply 5 Diamond and 5 Star Service Standards at all times Other duties assigned Qualifications Several years of progressive pastry experience in a luxury hotel or highend restaurant setting, as an executive pastry chef role. Creative and passionate about food and customer service Strong experience knowledge of chocolate work, room amenities, banquet desserts/plated and buffet, food displays, and refined a la carte plated desserts for fine dining restaurant Stays current & knowledgeable of both local and global cuisine trends, applying those into our offerings Strong leadership, communication, interpersonal, mentoring and teambuilding skills. Able to give clear direction, set expectations and provide training to team members Ability to work with multiple departments, including Sales & Marketing, Banquets & Catering, the VIP Concierge Team, and InRoom Dining.
