Implement the application of LOT numbers and open date stickers on all containers. Coordinate with the chef, cook and assembly team members to ensure all ingredients are available for cooking and assembly. Work with the QA team to investigate and resolve QA/QC issues and/or client complaints Proper organization of fridges/freezers/shelves Preparing and cooking large quantities of food consistent with standard production practices. Follows recipes and/or product directions for preparing, seasoning, cooking, and tasting of different meals and sauces specified to catering requirements. Must be flexible with work schedule and hours and adapt to schedule changes to accommodate operational requirements. Responsible for keeping the operation area free of clutter and organized. Responsible for following all CCPs documentation and cooking, chilling, date coding, thaw records, related to HACCP regulations and SHFG food safety policies Have the ability to demonstrate a complete understanding of the required menus Prepare meats, fishes, pastas, side dishes and garnishes following recipes carefully Roast, fry, steam, grill, bake meats, fishes, vegetables as required by recipes Prepares food by cleaning, peeling, mincing, cutting, chopping, mixing portioning, measuring ingredients, packaging and labelling Maintain proper food production records, ensure all equipment is operable Notify manager of any maintenance repairs need or unsafe conditions Taste and smell prepared food to determine quality and palatability Monitor temperature of hot and cold foods through food preparation and service to ensure that established temperature goals Studies recipes assigned by the Chef, prepares and coordinates all meals Coordinates preparation for the following day''s menus Ensures standard of recipes to maintain consistent quality Ensures all kitchen equipment is in working order and kept clean at all times Wear food safety equipment while on duty, use work safety equipment while on duty Practice proper grooming, personal hygiene, and use safety equipment Communicate effectively with kitchen personnel & other unit departments Compliance with all company service standards, health & safety procedures, food safety requirements Perform other duties as assigned.
