Se rapportant au Chef excutif, le Souschef occupe un poste de gestion intermdiaire au sein du service de la cuisine et est responsable de la supervision des oprations quotidiennes que ce soit dans la cuisine banquet ou celle du restaurant de lhtel. La gestion des cots de la nourriture ainsi que le contrle de la production sont importantes afin de rduire toute forme de gaspillage. De surcrot, le souschef agit comme formateur culinaire pour tous les employs de la cuisine sur une base quotidienne. Ce Que Vous Ferez Agir comme support principal aux chefs de service en jouant un rle de gestion au sein de la cuisine; Agir en tant quintermdiaire entre les divers dpartements qui composent la division Nourriture et boissons ainsi quavec tout autre service de lhtel; Superviser la prparation et la cuisson de divers plats; Proposer et dvelopper des nouveaux items cratifs pour le menu qui respectent les standards de la marque Four Seasons; Grer les employs de la cuisine en faisant les horaires, la paie, la formation, lencadrement et participer lembauche des employs; Diriger et encadrer lquipe afin de leur permettre datteindre un service la clientle exceptionnel et ce, tout en assurant leur propre satisfaction au travail; Superviser la production et les commandes de mme quvaluer le rapport qualit prix des produits sur une base quotidienne; Sassurer du respect des standards de propret de la MAPAQ; Favoriser un environnement de travail scuritaire en faisant respecter les normes de sant et de la scurit au travail. Ce Que Vous Contribuez Bonnes habilets de communication en franais; Un niveau danglais intermdiaire est requis pour offrir un service professionnel une clientle internationale, comprendre leurs demandes spcifiques et rpondre de manire efficace; De fortes aptitudes interpersonnelles et en rsolution de conflit; Avoir une attitude de faire le ncessaire; Bonnes connaissances en gestion dinventaire et de cots nourriture/mainduvre; Style de gestion mettre les mains la pte dans la cuisine; Excellentes connaissances en gestion des oprations, notamment en nourriture, boissons, gestion de personnel, linventaire et la propret; Passionn par la nourriture et lhospitalit; tre laise bouger beaucoup et passer de longues heures debout; tre disponible pour travailler les jours, soirs et fins de semaine, selon les besoins; Trois cinq annes dexprience comme Souschef dans un tablissement culinaire structur haut de gamme; Diplme dtudes secondaires ou quivalent. About The Role We are looking for individuals who have a solid knowledge of food and are passionate to develop their management skills within the hotel industry, have creativity and flair and the ability to provide guidance to others, and can evidence good business acumen and a strong work ethic. What You Will Do Supports senior leadership by developing and assuming basic management responsibilities; Assumes the role of liaison between all departments within the culinary division and all other hotel departments; Supervises the preparation and cooking of various food items; Develops and implements creative menu items that adhere to Four Seasons brand standards; Manages kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring; Leads and coaches the team towards achieving exceptional guest service and employee satisfaction results; Monitors food production, ordering, cost quality and consistency on a daily basis; Ensures proper safety and sanitation of all kitchen facilities and equipment. What You Bring Good communication skills in both French; An intermediate level of English is required to provide professional service to international customers, understand their specific requests, and respond effectively. Strong interpersonal and conflict resolution skills; 'Do Whatever It Takes' attitude; Knowledge of inventory controls and food/labor cost; Willing to manage the kitchen with a 'hands on' approach; Strong knowledge of back of the house operations including foods, beverages, staff supervision, inventory, and food safety; True passion for food and hospitality; Move about facility and stand for long periods of time; Must be available to work days, nights, and weekends as required; Three to five years of SousChef experience in a fullservice, structured dining establishment; Secondary diploma or equivalent.
