Job Description

Overview Under the direct supervision of the Chef at Table Rock House Restaurant, and within established policies, procedures, and guidelines, assists with managing the kitchen operations at both Table Rock House Restaurant and Table Rock Bistro and Wine Bar. Ensures that safety and operational practices and procedures are understood, implemented, and adhered to. Ensures that the highest level of food quality and customer service is being offered to visitors at all times and all operational and administrative requirements are fulfilled to the Niagara Parks Commission and Department Standards. Niagara Parks offers a salary of $63,727.53 to $76,136.23 per annum as well as a comprehensive benefits package and defined benefit pension plan. Qualifications Successful completion of the Red Seal Certification or equivalent relevant work experience in a Kitchen Management Capacity. Minimum three (3) years of experience in a Kitchen Supervisory role. Active Safe Food Handlers Certificate. Strong knowledge of cooking methods and procedures. Sound knowledge of any applicable legislation/regulations and procedures including sanitation laws and the Occupational Health and Safety Act. Knowledge and understanding of inventory methods and procedures as well as quality inspections of goods. Interpersonal and communication skills including tact and diplomacy, customer service skills. Experience catering large scale premium events as well as high volume a la carte dining. Ability to perform the manual tasks associated with the position, knowledge of basic hygiene and sanitation. Ability to provide leadership to others including strong supervisory and organizational skills. Ability to safely operate various large and small mixing and steam powered equipment as well as gas cooking equipment. Experience in monitoring function sheets and daily forecasts. Required to work variable shifts and weekends. Key Activities Finance & Administration Ensures employees start and finish times are accurately reported for payroll purposes. Oversees daily kitchen operations and provides training as required. Completes daily shift reports, incident, accident and other reports as required. Makes suggestions in order to improve safety, customer service or operational efficiency. Attends meetings, presentations, training and other sessions as recommended. Assists in gathering data for preparation of the budget and other financial reports. Ensures efficient staffing levels are maintained and budgeted targets are met. Operations In cooperation with and under the direction of the Chef, directs and manages the overall supervision of kitchen operations. Ensures that all staff work in compliance with the Occupational Health and Safety Act, the Collective Bargaining Agreement and Niagara Parks Commission policies and procedures. Investigates, follows up and responds/reports on incidents, accidents and customer complaints. Assists in the coordination of planning, preparing, cooking, and serving food. Supervises students and unionized staff to ensure that all standards, safety procedures and policies are followed. Resolves kitchen issues as appropriate and reports to Chef/Manager as required. Assists in organizing and conducting monthly and annual inventories and ensures adequate levels of supplies of all inventories are available. Monitors quality of food, cleanliness of kitchen and other standards for the operations. Prepares vegetables, meats, fish, and poultry for roasting, grilling and sauting. Oversees the receiving function for food products and restaurant supplies. Adjusts menus to cater to diverse food tastes and accommodates for allergy restrictions. Attends training seminars and trade shows where relevant, and relays the information gathered there to staff. Directing & Supervising In cooperation with the Chef and Manager, co-ordinates the overall supervision of the kitchen operations, including scheduling staff, determining workstations, and assigning tasks. Provides technical guidance, advice, and assistance to staff. Participates in hiring, disciplining, staff development, training, and employee relations. Analyses, monitors and ensures that quality and quantity of food, cleanliness, and other kitchen standards are achieved. Monitors Uniform and staff appearance, ensuring standards are maintained. Documents coaching, counseling and discipline sessions and provide detailed feedback for annual staff performance reviews. Provides additional staffing as required by offering additional hours in accordance with the Collective Agreement and staffing procedures. Performs Other Related Duties Makes recommendations to improve products, service, efficiency and operating procedures. As assigned.
