The Lookout Restaurant plays a key role in bringing our wines and brand to life through elevated dining, exceptional service, and unforgettable experiences. Position Summary The Restaurant Manager is responsible for planning and executing best-in-class guest experiences across all Food and Beverage service operations at The Lookout Restaurant. This role ensures consistently high-quality dining experiences that enhance the Gray Monk brand while meeting or exceeding financial objectives. Areas of responsibility include the main dining room, bar, seasonal outdoor patios, group functions, and events. The Restaurant Manager provides hands-on leadership, drives operational excellence, and fosters a culture of service, collaboration, and accountability. The responsibilitie this teammate will bring - Business & Financial Performance Develop and execute business strategies to meet or exceed financial objectives Manage gross profit margins, operating expenses, labour costs, staffing levels, scheduling, and inventories in alignment with budget Maintain ownership of inventory control and detailed cash management and reconciliation Analyze Food & Beverage monthly P&L statements and proactively address variances Monitor industry and consumer trends to identify new revenue opportunities Analyze sales mix and lead menu engineering initiatives Leadership & Operations Provide daily on-site leadership, including opening and closing oversight, pre-shift meetings, and event preparation Recruit, onboard, coach, and develop team members to deliver service excellence Partner with the Estate Manager and Human Resources on performance management Execute and uphold Restaurant Standards of Service, operational policies, and procedures Be actively engaged and present during service periods Ensure completion of administrative duties including payroll, scheduling, POS programming, and communication Oversee maintenance and upkeep of all front-of-house equipment and facilities Respond promptly and professionally to guest feedback and ensure responsible liquor service Collaboration & Revenue Growth Build strong working relationships with Kitchen, Guest Relations, Hospitality Sales, Retail, and broader estate teams Maximize revenue by leveraging knowledge of menus, wines, experiences, Wine Club benefits, and events Develop a strong understanding of Estate Wine Group properties and Andrew Peller Limited Wine Shop locations Health & Safety Ensure a safe and healthy work environment through effective operation of Health & Safety programs Maintain compliance with all applicable government regulations and Joint Health and Safety Committee requirements The skills, knowledge & experience this teammate will bring - Minimum 3 years of management experience in a premium casual or elevated dining environment Post-secondary education in Hospitality or a related field Graduate of or current enrolment in an internationally recognized Sommelier or WSET program considered an asset Strong working knowledge of restaurant technology (POS systems, OpenTable, etc.) Strong cocktail knowledge considered an asset Passion for hospitality and exceptional guest service Proven ability to lead, coach, and inspire high-performing teams We are conducting an internal and external search simultaneously.
