The Distiller is responsible for executing all aspects of spirit production, from raw material handling to distillation, proofing, and quality control. This role ensures consistent, high-quality output while maintaining safety, sanitation, and operational efficiency. The distiller works closely with the Master Distiller and production team to support continuous improvement and innovation. The Distiller''s responsibilities extend beyond core production and distillation duties, encompassing ancillary tasks as assigned by the Master Distiller to support overall operational needs. Duties & Responsibilities Production & Operations Operate and monitor stills, fermenters, pumps, boilers, and other distillery equipment. Perform mashing, fermentation management, distillation, barreling, blending, and proofing. Maintain accurate production logs, fermentation charts, and distillation records. Conduct sensory evaluations to ensure spirit quality and consistency. Follow all SOPs (Standard Operating Procedures) and contribute to improving them. Quality & Compliance Ensure all production complies with federal and provincial regulations (CRA, Excise, etc.). Perform routine quality checks, including gravity, pH, temperature, and proofing measurements. Maintain cleanliness and sanitation throughout the distillery. Safety & Maintenance Follow all safety guidelines related to equipment, chemicals, and alcohol production. Perform basic equipment maintenance and report issues promptly. Keep production areas organized and hazard-free. Inventory & Materials Handling Manage raw materials including grain, botanicals, yeast, and barrels. Assist with receiving, tracking, and organizing inventory. Support bottling operations when needed. Work with the Master Distiller on recipe development and product trials. Support continuous improvement in process efficiency and product quality. Participate in team meetings and contribute production insights. Required Experience 2+ years of distillery or beverage production operations. Experience in distilling, brewing, fermentation science, food science or similar production environment preferred. Strong mechanical aptitude and ability to operate industrial equipment. Hands-on experience with fermentation, distillation equipment, and quality control. Diploma or degree in Chemistry, Chemical Engineering, Food Technology, Biotechnology, Brewing & Distilling, or related technical field. Formal training, or certification in distillation, fermentation, and food safety is an asset.
