Senior Chef Shark Club Sports Bar & Grill (Vancouver) Location: Vancouver, BC (Home Store) Position Type: Full-Time Reports To: Regional Chef / MUL Team About the Role The Senior Chef at Shark Club Sports Bar & Grill plays a key leadership role within our highvolume, eventdriven Vancouver flagship location while also supporting broader multiunit culinary initiatives. This role is ideal for an experienced culinary professional who thrives in a fast-paced environment, loves innovation, and is passionate about elevating food quality and guest experience across multiple stores. The Senior Chef will assist with operational culinary leadership, lead menu innovation projects, train and support teams across various locations, and contribute to new product developmentparticularly our Feature Burger of the Month program. Key Responsibilities Culinary Leadership & Operations Support daily back-of-house operations at the Vancouver restaurant, ensuring consistent adherence to Shark Club brand standards. Lead kitchen teams during peak periods in a high-volume, event-driven environment. Uphold and enforce all food safety, sanitation, and health standards. Cost Controls & COG Management Monitor and manage food cost (COG) performance, ensuring accuracy in portioning, waste control, and recipe execution. Support inventory processes including ordering, transfers, waste tracking, and variance investigation. Assist the MUL team in driving cost efficiencies across multiple stores. Multi-Unit Leadership (MUL) Support Assist the MUL team with culinary standards, audits, coaching, and store-level performance improvement. Provide onsite culinary support to other Shark Club locations as required. Travel to assist with openings, training, operational support, and special projects. Menu Innovation & Development Collaborate closely with culinary leadership to develop and test new menu items. Play a lead role in curating, testing, and refining recipes for the Feature Burger of the Month program. Participate in structured kitchen tests, tastings, and feedback sessions for upcoming menu cycles. Prepare documentation and training resources related to new recipes and procedures. Training & Team Development Train BOH teams across multiple locations on new menu items, techniques, and procedures. Mentor line cooks and junior kitchen leaders to strengthen bench development and operational excellence. Support consistent execution by providing hands-on coaching and follow-up. Event & Volume Management Contribute to strategic planning and execution during major events, sports broadcasts, and high-volume days in the Vancouver flagship store. Ensure efficient production, quality control, and speed of service in a busy environment. Qualifications & Requirements 35+ years of culinary leadership experience, preferably in high-volume casual dining or sports bar environments. Strong culinary fundamentals with a passion for recipe development and innovation. Ability and willingness to travel for training, support, and store visits. Experience with Crunchtime is an asset. Proven experience coaching and developing kitchen teams. Excellent communication, organization, and time management skills. Flexibility to work evenings, weekends, and event-driven schedules.
