Hello Nori - Director of Operations About the Role Hello Nori is seeking a highly analytical and systems-oriented Director of Operations to drive operational performance across our growing restaurant portfolio. This role will lead the operational infrastructure that supports the business as it scales from restaurant performance analytics and labor optimization to supply chain strategy and operational systems. You will work closely with the CEO and leadership team to translate operational data into clear decisions that improve profitability, consistency, and growth readiness. This is a role for someone who enjoys solving operational problems through data, building scalable systems, and creating the operational foundation for growth. This role partners closely with Restaurant Operations, Culinary, Finance, and People teams to ensure operational decisions are informed by clear data and aligned with company goals. Scope of the Role Oversight of multi-unit restaurant performance Ownership of operational performance metrics and reporting Leadership of systems, processes, and operational infrastructure Responsibility for procurement and supply chain management Operational support for new restaurant openings and growth Key Responsibilities Operational Performance & Financial Metrics Own restaurant-level performance across all locations, including cost, labor efficiency, food cost variance, and controllable expenses Monitor and analyze operational KPIs such as sales trends, sales per labor hour, margin performance, and cost variance Build and maintain performance dashboards and operational reporting tools Identify trends and operational opportunities using data analysis Partner with Finance on budgeting, forecasting, and variance analysis Operational Systems & Infrastructure Build and implement scalable operational systems and standardized processes Develop operational playbooks and SOPs that drive consistency across locations Own key operational platforms including scheduling, payroll, reporting, and analytics tools Lead initiatives that simplify workflows and improve operational clarity Ensure performance metrics are consistently tracked and reported across the business Supply Chain & Procurement Lead procurement strategy across all locations Manage vendor relationships, pricing negotiations, and supplier agreements Analyze purchasing trends and cost drivers to improve margins Monitor product availability, quality standards, and cost performance Partner with Culinary to evaluate the operational and financial impact of menu changes Growth & New Restaurant Openings Ensure operational systems, reporting frameworks, and processes are in place prior to new openings Develop scalable operational playbooks that support efficient multi-unit growth Monitor early-stage restaurant performance and support post-opening stabilization Continuously refine operational processes based on lessons learned during expansion Strategic Leadership Partner closely with Restaurant Operations, Culinary, Finance, and People teams Provide data-driven insights that inform leadership decisions Translate operational data into clear strategic recommendations Act as an operational advisor to the CEO and leadership team What Were Looking For Experience leading multi-unit restaurant operations with full P&L accountability Strong analytical mindset and comfort working with operational data Experience building systems, dashboards, or operational frameworks Deep understanding of restaurant performance metrics including cost, labor efficiency, and food cost management Ability to move comfortably between strategy and hands-on operational execution Strong leadership and cross-functional collaboration skills
