Job Description Under the general supervision of the Culinary Director, the Sous Chef oversees procuring, organizing, planning, preparing and directing the preparation of all catering events. This role also performs administrative and financial duties for the catering team, including ordering and resolving discrepancies with suppliers and customers, creating and adhering to budgets for related costs, and supervising and training staff within their charge. Cook from scratch with local ingredients while continually sourcing and developing new ideas to generate additional profit for the unit. Plan and develop menus and recipes for the cafeteria, incorporating the companys promotional themes and healthy options, while encouraging creative ideas from employees. Establish and implement food preparation schedules for all staff and recipes to create an efficient and organized process for each dish. Work with clients and customers to meet their needs within budgeted restrictions and in accordance with company practices and policies. Establish and implement food preparation schedules for the team to ensure a safe, efficient, and organized process. Respond to customer and client concerns promptly, resolving issues that arise. Implement new techniques and planning ideas to provide a higher level of service. Ensure all staff adhere to safety regulations and procedures while preparing food. Maintain clear lines of communication between the Executive Chef, District Manager, and staff (company and temporary staff). Support inventory maintenance, ordering, receiving and stocking supplies; resolve supplier discrepancies and escalate unresolved issues to the Culinary Director or District Manager as needed. Ensure sanitation of the work area and equipment, maintaining a clean working environment. Identify opportunities for business growth. Train and develop staff in proper procedures and best practices, providing coaching for career development. Listen to customers (internal and external) and respond professionally to questions and concerns, directing issues to higher levels of management as needed. Remain an ambassador of goodwill, ethics, and strong client relations on behalf of the Company. Assist with other unit operations as necessary and perform other duties as assigned. Qualifications Three years of recent related experience in the catering food service industry leading high-volume catering teams, or an equivalent combination of education, training, and experience in multi-million dollar catering operations. Fully fluent in a wide variety of world cuisines and menus. Full knowledge of special diets (Vegan, Halal, Gluten-Free, Dairy-Free, etc.). High attention to detail and multitasking ability. Red Seal Chef status is preferred but not required. Experience with cost control and employee management. Serve Safe and/or Food Safe certified with thorough knowledge of health and safety regulations for the food preparation/service industry. Superior communication skills in both verbal and written English. Ability to handle employee, customer, and client concerns with tact and maintain confidentiality in a unionized environment. Strong organizational skills with a focus on quality; ability to manage multiple tasks and priorities. Ability to operate related equipment safely and use computer systems including POS software.
