Key Responsibilities Menu Development & Promotions Develop and enhance Indian menu offerings, including regional specialties (North Indian, South Indian, vegetarian, street food, etc.). Design promotional packages, thali combos, festival specials, and seasonal meal deals. Standardize recipes, spice levels, portion sizes, and presentation guidelines for consistency and cost control. Analyze customer preferences and introduce innovative dishes to increase sales and customer engagement. Food Preparation & Production Prepare authentic Indian dishes including curries, biryanis, tandoori items, gravies, vegetarian specialties, and regional delicacies. Develop and maintain standardized recipes for consistent flavor and presentation. Prepare spice blends, marinades, and sauces from scratch. Ensure proper cooking techniques for tandoor, grill, and stovetop preparations. Oversee daily mise en place and batch cooking for retail hot food counters. Maintain freshness, portion control, and food quality standards. Kitchen Operations Assist the Head Chef in supervising backofhouse operations. Monitor inventory levels and ensure proper stock rotation (FIFO). Control food costs and minimize waste. Ensure proper storage, labeling, and handling of raw and cooked foods. Maintain cleanliness and compliance with food safety regulations. Team Leadership & Training Supervise and train kitchen staff on Indian cooking techniques and presentation standards. Coordinate workflow during peak service hours. Maintain discipline, teamwork, and high productivity in the kitchen. Support scheduling and task delegation. Quality & Customer Experience Ensure food displays are appealing, fresh, and wellstocked. Maintain consistency in taste and presentation. Uphold the companys reputation by delivering exceptional food quality and service standards. Qualifications & Requirements Proven experience as a Sous Chef or Senior Cook in Indian cuisine. Strong knowledge of regional Indian cooking styles (North Indian, South Indian, IndoChinese, etc.). Experience with highvolume food production. Knowledge of traditional Indian spices and flavor balancing. Familiarity with food safety and sanitation regulations. Strong leadership and organizational skills. Culinary diploma/certification is an asset.
