Position Name: Food & Beverages Controller Experience: 8-10 Years Location: Wet’nJoy – Lonavala Job Overview: The F&B Controller will be responsible for overseeing the financial, operational, and quality control aspects of the food and beverage function across multiple parks — with primary focus on Lonavala and Indore. The role includes in-depth involvement in costing, inventory management, product standardization, and compliance with FSSAI and legal regulations. This position plays a crucial role in optimizing costs, maintaining quality, and ensuring operational consistency across sites. Key Responsibilities: 1. Costing & Budget Management Conduct detailed cost break-up and costing analysis for raw materials and finished products. Monitor F&B expenditures to ensure adherence to budgets and cost-efficiency targets. Evaluate vendor quotations and procurement costs to support better cost control. 2. Menu/Product Standardization Collaborate with culinary and operations teams to ensure menu and product standardization across all parks. Maintain consistency in recipes, ingredients, and portion sizes to control costs and ensure brand quality. 3. New Product Design & Feasibility Support the design and costing of new food & beverage products in line with market demand and brand strategy. Work closely with chefs and the R&D team to validate feasibility, cost margins, and sourcing strategies. 4. Inventory Control & Management Implement and monitor inventory management systems to reduce wastage, pilferage, and stock discrepancies. Perform regular audits and variance analysis across all locations. 5. Quality Assurance & Compliance Monitor food quality and safety standards as per FSSAI guidelines. Ensure compliance with all legal and statutory food safety regulations and maintain proper documentation for audits. 6. Reporting & Analysis Generate periodic reports on food cost performance, wastage, consumption patterns, and variance. Analyze trends and offer actionable insights for operational and financial improvement. 7. Multi-Location Coordination Regularly travel to park locations to conduct audits, train staff, and ensure process adherence. Act as the central point of control to maintain uniformity in practices across sites. 8. Training & Support Train operational staff on SOPs, cost control, wastage management, and hygiene standards. Provide ongoing support to operations teams to address gaps in quality or compliance. Candidate Requirements: Experience: Minimum 8–10 years in food & beverage operations, preferably in theme parks, hospitality chains, or large-scale F&B outlets. Expertise in: Costing, inventory control, FSSAI compliance, vendor management, quality audits, and multi-unit coordination. Education: Bachelor’s or Diploma in Hotel Management, Culinary Arts, or equivalent. Preferred Skills: Strong analytical ability, attention to detail, cross-functional collaboration, and a hands-on approach to problem-solving.
