The company prides itself on offering unique experiences and high-quality service across various sectors of the hospitality industry.Job PurposeTo independently manage the South Indian kitchen section, ensuring authentic taste, consistent quality, food safety, and timely service as per hotel/restaurant standards.Key Responsibilities- Prepare and present authentic South Indian dishes (Tamil, Andhra, Kerala, Karnataka styles) - Handle live counters for Dosa, Idli, Vada, Uttapam, Appam, Pongal, etc. - Ensure consistency in taste, portioning, and presentation - Plan daily mise-en-place and ensure smooth kitchen operations - Supervise and guide Commis Chefs and kitchen assistants - Monitor food quality, freshness, and hygiene standards - Follow HACCP, food safety, and hygiene protocols strictly - Control food cost, minimize wastage, and manage inventory - Coordinate with stores for raw material requisitions - Maintain cleanliness of the work area and equipment - Assist in menu planning, trials, and new dish development - Handle guest feedback professionally and take corrective actionSkills & Competencies- Strong knowledge of South Indian cooking techniques and ingredients - Expertise in breakfast buffet and à la carte South Indian menus - Ability to manage section independently - Leadership and team-handling skills - Time management and multitasking abilities - Good understanding of hygiene and food safety standardsQualifications & Experience- Diploma or certification in Culinary Arts (preferred) - Minimum 3–5 years of experience in South Indian cuisine - Prior experience in hotels, resorts, or premium restaurants preferredWorking Conditions- Rotational shifts, including weekends and holidays - Standing for long hours in a hot kitchen environment - Strict adherence to grooming and uniform standards
