Job DescriptionPosition: Executive Chef (Multi-Cuisine)Location: MumbaiAsset Type: Ultra-Luxury / Ultra-HNI Residential BuildingReporting To: Food & Beverage Manager / General ManagerTeam Handling: Culinary Team, Kitchen Stewards & Support StaffRole OverviewThe Executive Chef will be responsible for the pre-opening, launch, and end-to-end culinary operations of an ultra-luxury residential building catering exclusively to Ultra High Net Worth Individuals (UHNI).The role requires a strong 5-star luxury hotel background, exceptional expertise in multi-cuisine cooking, high standards of hygiene and food safety, leadership capability, creativity, and an unmatched focus on luxury dining experiences.The Executive Chef will lead the kitchen operations to ensure world-class food quality, service excellence, cost control, procurement, and team management while delivering personalized dining experiences for UHNI residents.Key Responsibilities1. Pre-Opening & Concept DevelopmentLead pre-opening planning and complete kitchen setup.Design kitchen workflow and operational layout for multi-cuisine execution.Develop and curate luxury menus across cuisines including:Indian (regional and modern interpretations)Continental (French, Italian, European classics)Oriental (Chinese, Japanese, Thai, Pan-Asian)Mediterranean (Greek, Spanish, Levantine)Seasonal, wellness-focused and specialty menusSource premium ingredients and build a strong vendor network.Create SOPs, recipe manuals, plating guidelines, and hygiene standards.Recruit, train, and deploy culinary teams before launch.2. Culinary Operations ManagementManage end-to-end kitchen operations for:In-residence diningPrivate dining rooms, lounges, and poolside serviceEvents, banquets, and private celebrationsEnsure consistency in taste, presentation, and portion control across cuisines.Maintain authentic flavors with luxury plating standards.Deliver hotel-level quality adapted to a premium residential environment.3. Resident Experience & PersonalizationCreate personalized dining experiences for UHNI residents.Maintain resident preference profiles including:Dietary restrictionsAllergiesWellness requirementsCuisine preferencesPlan curated tasting menus, chef’s tables, and private dining events.Ensure complete discretion and professional interaction with residents.4. Hygiene, Safety & ComplianceEnsure compliance with FSSAI regulations and global hygiene standards.Maintain strict sanitation, cleaning, and food safety protocols.Conduct regular kitchen audits, hygiene checks, and equipment inspections.Manage pest control, waste management, and kitchen safety procedures.5. Budgeting & Financial ManagementPrepare and manage kitchen budgets (CapEx & OpEx).Monitor and control:Food costs across multiple cuisinesLabor costsInventory levels and wastageImplement cost controls without compromising luxury standards.Negotiate vendor contracts and ensure premium quality procurement.Prepare MIS reports, forecasts, and variance reports for management.6. Team Leadership & DevelopmentLead, motivate, and manage a high-performing culinary team.Recruit specialist chefs for different cuisines.Conduct training on:Multi-cuisine food preparationLuxury plating and presentationHygiene and safety standardsBuild a culture of discipline, creativity, innovation, and excellence.7. Interdepartmental CoordinationWork closely with:F&B Manager for service alignment and menu planningHousekeeping for cleanliness and pantry operationsConcierge and Events teams for private functions and VIP gatheringsEnsure smooth execution of all multi-department requirements.Candidate Profile & EligibilityMandatory RequirementsMinimum 5 years of experience as Executive Chef or equivalent senior chef role.Strong background from 5-star luxury hotels only such as:The Oberoi GroupTaj HotelsFour SeasonsProven pre-opening experience in luxury hospitality.Expertise in Indian, Continental, Oriental, and Mediterranean cuisines.Experience managing large kitchen teams with multi-cuisine operations.Exposure to UHNI / VIP guest service standards.Preferred ExperienceExperience in luxury residences, branded residences, private clubs, or elite hospitality setups.International culinary exposure.Knowledge of wellness-focused menus, fusion cuisine, and dietary-specific meal planning.Key Skills & CompetenciesStrong culinary expertise across multiple cuisines.Leadership, training, and people management skills.Budgeting, costing, and inventory management.Deep understanding of hygiene, safety, and quality standards.Strong communication and coordination skills.Creativity, professionalism, and discretion.Personal AttributesImpeccable grooming and professional presence.Highly organized and detail-oriented.Passion for innovation and culinary excellence.Integrity, confidentiality, and UHNI-level service etiquette.Ability to inspire and lead high-performance teams.
