This marks an exciting step for AKI as it ventures outside of Malta for the first time.Following the successful establishment of AKI in Valletta, Malta, and with our exciting upcoming launch in London, we are now looking for an exceptional Head Chef specialising in Japanese cuisine to lead our culinary team and bring an elevated Japanese dining experience to life. This role is ideal for a passionate and highly skilled chef with a strong foundation in traditional techniques and a flair for modern presentation.The Job • Oversee and manage all kitchen operations for our Japanese restaurant concept.• Develop innovative and authentic menus incorporating sushi, sashimi, robata, tempura, and seasonal dishes.• Ensure the highest standards of food quality, presentation, and hygiene.• Lead, train, and inspire a dedicated culinary team.• Monitor food costs, inventory, and supplier relationships.• Maintain strict compliance with HACCP and food safety standards.• Work closely with the front-of-house team to deliver memorable guest experiences.Job Requirements• Minimum 5 to 10 years of culinary experience, including 3+ years as a Head or Senior Sous Chef in a Japanese kitchen.• Mastery of Japanese culinary techniques and ingredients.• Hands-on expertise in sushi and sashimi preparation is essential.• Experience in high-end or luxury dining environments preferred.• Strong leadership, communication, and team development skills.• A commitment to excellence, precision, and innovation.Why Join Us?If you are a passionate and experienced Head Chef professional eager to be part of AKI's exciting London launch, we encourage you to apply.To Apply:Please click on the Apply for This Job button and submit your CV.
