Since opening in May 2019 with the first site in Dalston, Hacha has become a multi-award-winning neighbourhood bar, with a second new opening in Bermondsey and the signature serve, Mirror Margarita, seeing huge success and growth as a ready to drink cocktail brand in its own right. Founded by Deano Moncrieffe and Emma Murphy, who both bring a huge amount of experience and expertise, Hacha is a celebration of Tequila & Mezcal, Londons first dedicated Agaveria and home of the now iconic Mirror Margarita. Voted Specialist Bar of the Year by CLASS magazine two years in a row, Hacha is globally regarded as one of the pioneers of the agave spirits boom in the UK. We hold a varied and ever changing list of agave spirits as well as a creative cocktail menu of contemporary classics and authentic Mexican tacos and small plates. Our newest venue, Hacha Bermondsey opened in February 2025 in the heart of the stunning Bermonds Locke Hotel. This new site is a sister bar to Dalston, but with a more elevated style of service befitting of its hotel location. We are looking for an experienced senior manager to lead and inspire our team and make Hacha Bermondsey a go-to destination in London for Mexican food and drink. The ideal candidate with have managementexperiencein a hospitalityenvironment - cocktail bar, restaurant or hotel - have fantastic attention to detail and servicestandards and good leadership skills. The Role The GM will directly report to and work closely with the operations manager, and maintain a close working relationship with the owners in their respective areas of the business and lead the team at the new venue. Service opening and closing duties, including end of night sales reporting. Being a trusted key holder to the venue and card holder for petty cash Maintain standards of H&S to meet necessary guidelines and certifications, ensuring venue & equipment is kept clean and maintained to highest standards. Prioritise guest fulfilment and satisfaction for all bookings. Stock management; keeping stocked items clean & organised and performing a weekly stock take. Recording of weekly stocktake into the till system, collating a list of all stock and grocery that needs to be ordered for the coming weeks service and placing relevant orders. Venue stock management; including recording all new stock deliveries, a ccurately recording daily wastage, discounts & staff drinks. Maintaining the rotation of The Agave List and ensuring all food pairings are fully stocked. Weekly batching and bottling of menu cocktails and take-away RTDs ahead of service. Be a leader to inspire and motivate the team. Assisting the Operations Manager with new team onboarding and training programmes. Ensure the Hacha ethos and style of service is adhered to by all team members. Be the on site point of contact for our kitchen partners; Nopalito. Build and maintain a close working relationship with the hotel management. Monitor bookings on the Open Table system, flagging any foreseen issues to the operations manager, or making changes to the floorplan where necessary to accommodate all bookings and preferences. Working with the owners to execute brand activations, events, and marketing initiatives to increasefootfall and guest experience.
