You will be leading and empowering our established team to push our food offering to the next level. Supporting our Head Chef you will use your experience and passion to drive excellence, creativity and development. Our ideal candidate demonstrates the ability to consistently deliver a quality product, knows the importance of working in a clean, tidy, organised manner, and has a natural tendency to do everything to the best of their ability.Responsibilities and Duties:Assisting the head chef with the day-to-day running of the kitchenDesigning menus together with the head chefPreparing, cooking and presenting food within agreed recipe standardsSupervision of the kitchen brigadeDeputizing for the head chef when absentOrdering food provisions, stock control and overseeing inventory managementEnsuring that all kitchen operations are in compliance with food hygiene (HACCP) and safety regulationsOrganizing kitchen team shifts and rotasCoordinating team training and developmentManaging and resolving any issues that may arise quickly and efficientlyWe work straight shifts covering breakfast, lunch, afternoon tea and dinner, as well assome functions.Qualifications:minimum of 2 years experience in a quality hotel (4-star or higher) or restaurantExperienced in all areas of food preparation including butchery, fish prep, sauce, and patisserieKnowledge of HCAAP, food hygiene and safety regulationsKey Skills :Ability to forecast, plan and prioritiseLeadershipCommunicationWorks well under pressureOrganisedAs a family-owned, independent Cornish business, we value every member of our talented team.
