Head Chef Position Little Hollows Pasta - BS6 6PF 35,000 - 40,000 pa + Service Charge and OT pay (Circa 10,000 pa) 50 hours pw Tuesday - Saturday working week Little Hollows Pasta is an independent Italian restaurant on Chandos Road in Cotham, Bristol. Holding a Michelin Bib Gourmand we are known for creating exciting Italian inspired cuisine using top quality local and Italian ingredients. All the pasta is made on site in the window of the restaurant, and we specialise in all varieties of handmade raviolis, noodles, semolina shapes and bronze die cut shapes. We have a reputation for exceptional food as well as friendly and knowledgeable front of house service. The Head Chef position at Little Hollows is our most senior role and is pivotal in continuing to produce exceptional food in a consistent and efficient way. We need someone with great technical skills and knowledge, a great palate, who can design and develop coherent menus and wants to join a dedicated and friendly team of around 20 people. We are known as one of Bristols busiest independent restaurants and are proud to have exceptionally low staff turnover, which is a reflection of how we treat and develop our team. It is vital for the Head Chef joining us to continue promoting that environment. Applicants should have: 2 years experience in a similar role Good knowledge of Italian cuisine Cooking using high quality and seasonal ingredients Experience of managing and organising a busy kitchen Team building, management and development experience Enthusiastic, professional and friendly personality The role Menu Developing a full menu of snacks, small plates, mains, desserts, cheese. Documenting all recipes. Ensuring menu is consistently produced in prep and service. Maintain our Michelin Bib Gourmand. Team Building, maintaining and developing a strong kitchen team. Mentoring and motivating through technical training and setting professional objectives. Individual reviews to keep the team engaged, motivated and happy in their role. Supporting your team in their career goals. Communication Develop a close and respectful relationship with your front of house colleagues. Building strong lines and systems of communication. Keep your team informed of any changes in the kitchen/restaurant. Building great relationships with new and existing suppliers. Working with the owner and FOH Manager on short term and strategic goals to improve the restaurants proposition. Organisation Good grasp of documentation for rotas, EHO sheets, costing, performance forecasting and reporting. Keep the kitchen suitably stocked, organised, clean, tidy and optimised for service. Good working practices to continue reducing waste in the business. Attitude Someone that can manage and nurture our team. Has an enthusiastic and friendly personality. Cares about the role.
