Job Description

*Overview:*The Executive Pastry Chef is a vital piece of Revo's management team and a major contributor to our company's creativity, uniqueness and success. The Pastry Program Director oversees all pastry operations across Revolution Roasters’ pastry kitchen and cafe locations. This role leads the pastry production team, driving both creative development and consistent execution of all pastry menu items. The Pastry Program Director is responsible for daily pastry department operations, ongoing recipe development, seasonal menu planning, quality control, inventory management, and the training and development of pastry staff. They ensure that every pastry item reflects REVO’s commitment to craft, consistency, and quality while maintaining efficient production systems and cross-department collaboration.*Core Responsibilities:**Team Leadership & Culture** Lead, support, and actively shape the culture and morale of the pastry team* Act as company ambassador to exhibit and condone CORE values within the company* Manage pastry production staff and oversee daily operations of the pastry department* Recruit, conduct interviews, hire, and onboard new pastry team members* Develop and deliver comprehensive training for pastry production, finishing, and plating standards* Conduct 90-day and annual performance reviews for pastry staff* Facilitate disciplinary actions when necessary with professionalism and fairness* Champion REVO values and foster a positive, creative, and growth-oriented work environment*Creative Development & Menu Innovation** Lead all pastry menu development, including seasonal offerings, specials, and catering products* Conduct R&D for new recipes and techniques that align with REVO’s brand and operational capabilities* Plan and execute seasonal pastry launches, from testing to training and rollout* Collaborate with cafe leadership, culinary teams, and marketing for tastings, photography, and product launches* Maintain detailed recipe documentation, cost analysis, and plating guides for all pastry items* Ensure product creativity is balanced with consistency, efficiency, and scalability*Production Oversight & Quality Control** Create and oversee daily pastry production schedules* Ensure quality, consistency, and presentation meet REVO standards across all outlets* Maintain production pars, batch sheets, and fulfillment systems for all pastry items* Oversee and refine SOPs for recipes, baking, finishing, storage, and delivery* Conduct regular QC checks on freshness, flavor, texture, and presentation* Maintain cleanliness, organization, and adherence to food safety and sanitation standards*Inventory, Ordering & Cost Management** Oversee pastry ingredient inventory, purchasing, and vendor relationships* Track product usage, waste, and costing to ensure profitability and sustainability* Implement and maintain accurate cost control systems and production tracking* Collaborate with BOH management on company-wide cost reporting and vendor optimization* Ensure proper storage, labeling, and rotation practices are followed consistently*Facilities, Equipment, & Logistics** Maintain pastry equipment in proper working order and coordinate repairs as needed* Create and follow maintenance schedules for ovens, mixers, and refrigeration equipment* Oversee pastry delivery logistics to cafes, ensuring accuracy and timeliness* Work with commissary and BOH teams to optimize production flow and efficiency* Maintain compliance with all health, safety, and sanitation standards*Qualifications** 5+ years professional pastry experience* Experience with laminated doughs* 2+ years management or supervisory experience* Ability to lift 50 lbs and stand for extended periods (up to 8 hours)* Open availability, including early mornings, weekends, and holidays* Reliable, proactive, and organized with strong communication skills* Calm under pressure and an excellent problem solver* Collaborative, creative, and results-oriented leader*If the concepts around this position resonate with you , please answer the screening questions along with sending us your resume*Job Type: Full-timePay: From $78,000.00 per yearBenefits:* 401(k)* 401(k) matching* Employee discount* Paid time off* Referral programApplication Question(s):* When was the last time you set out to achieve a goal and failed?
