Financial Management and Analysis u25cf Ensures that all culinary personnel follow the proper time and attendance policy u25cf Works with Exec Chef and Cafu00e9 manager to make sure that labor goals are met. u25cf Assists Executive Chef with placing proper orders, sourcing the best local and seasonal foods, and following purchasing guidelines. u25cf Completes inventory on an appropriate schedule u25cf Works with the Executive Chef to ensure that food cost meets budgetary goals each week Kitchen&Cafu00e9 Supervision u25cf Ensures that overall cafu00e9 kitchen space meets the standards as presented in Great Expectations, as well as oversees the daily appearance and upkeep of the kitchen u25cf Supervises the proper garnishing and presentation of food. u25cf Ensures that overall cafu00e9 meets the standards as presented in Great Expectations, as well as oversees the daily appearance of the entire Cafu00e9 u25cf Monitors daily signage for proper spelling and descriptions. Secondary Duties Special Events u25cf Assists Executive Chef&Catering Management team with special events as needed with staff, culinary support Marketing/Sales u25cf Works with Executive Chef or General Manager to plan seasonal tastings of new menu items, solicit feedback from guests. FOOD AND SAFETY RESPONSIBILITIES: u25cf Adheres to all Health Department, OSHA and ADA regulations. u25cf Follows all Safety Manual guidelines. u25cf Develops and revises station specific daily and weekly cleaning checklists and oversees their accomplishment. u25cf Conducts weekly F.A.C.T. meetings, and ensures that regular trainings are occurring in units u25cf Reports any injury, accident and/or food borne illness incident for customers and/or staff accurately and in a timely manner to the General Manager. u25cf Trains all personnel in safe operating procedures of all equipment, utensils and machinery.
