Job Description

Role:u Oversee all culinary production in a designated kitchen throughout the property. Also, direct stewarding requirements as needed. Work directly with the Chefs to plan and execute latest culinary trends and menu as needed. u Perform job responsibilities satisfactorily and according to department standards. u u Adheres to all Company, Safety and Department policies and procedures. u Fosters teamwork and provides excellent guest service, anticipates guest needs to exceed guest expectations. u Builds brand loyalty by living the JW Marriott Core Values.SKILLS/QUALIFICATIONS: u A minimum 10 yearsu' experience in culinary food service and 5 years in a supervisor or Room Chef role. Experience working in a Banquet environment required.u REQUIRED CERTIFICATE/LICENSE:u Valid Clark County health card, Serv Safe Manager preferredu MAJOR JOB DUTIES:u Duties include, but are not limited, to the following:u u u u u u u Prep and execute all menu items according to standards / station / restaurant or kitchen as directed by the Executive Chef u Ability to run an independent kitchen operation which includes front and back of house positions. Both management and line positionsAbility to control food cost, labor costs, health department requirements and hotel expectationsSupervise Sous Chefs, cooks, meal service, production and stewarding needsDevelop, mentor and motivate all associatesManage scheduling, payroll, attendance documentation, inventories, ordering, receiving and storage of products and discipline as neededAble to assess and direct the required work in any kitchensu Extensive knowledge in writing and costing menus for a variety of clients and eventsDocument menu changes, temperatures, meeting informationAttend meetings when required such as Chef meetings, B.E.O meetings, planning meetingsu Must be able to work all stations in any kitchen independently and with confidenceMust be able to write and direct recipes for all menu items in their kitchen that are productive, practical and profitableWork in a clean, safe and organized mannerMaintain proper fire and ticket timesAssist with replacing daily requisitions and rotating and storing themRestocks dishes and silverware as requiredEach associate is expected to carry out, within their capabilities, all reasonable requests by management.u About the JW Marriott Las Vegas Resort u& SpaThe JW Marriott Las Vegas Resort u& Spa offers world-class luxury just 20 minutes northwest of the famous Las Vegas Strip.
